There were a lot of cheeses to try with crackers and wine and people happily munched on them.
Sometime around the winter holidays Costco bumps up their cheese variety. One of the company that is well represented is Yancey's Fancy. Last summer we drove by it in Upstate New York on the way to Niagara Falls. Several cheeses by Yancy is sold in our local Costcos, and I'm happy about that since their product is superb. Strangely, my mom - a resident of NY was not able to find their cheese locally, but here it is sold every Thanksgiving and Christmas. The cheeses seem to be color coded - their outer wax rind is different colors according to the flavor. That is what lead me to play with my food.
After a party at my house I had several opened cheeses in my fridge. The next morning cheese for breakfast seemed like a logical thing to eat. By breakfast all the different cheeses were falling out of their colorful wax rind. I do not know what possessed me but I took a cooking twine out of the drawer, folded about 5in of it onto itself tripling the thickness and wrapped two wax rinds over the string. I did not think it would work, but it did. Here is a candle from Smoked Gouda and Champagne Cheddar, next was from Horseradish Cheddar and Wasabi Cheddar brown and black. This was silly and really fun.
If you look at the flame itself and the swirl around the wick , it has reminded me of the beautiful layered candles. The YouTube video is not in English but you could still see the technique. I could not compare myself to that but I want to share those beautiful candles.
